Turan's Tuna Curry

2 tablespoons vegetable oil
1/2 onion, minced
1/2 green bell pepper, minced
2 garlic cloves, minced
1 teaspoon minced gingerroot
1/2 teaspoon hot Madras curry powder
3 (6-ounce) cans tuna packed in spring water, drained
1 to 2 green serrano or jalapeno chilies, stemmed, seeded and minced, or to taste
Salt to taste
1/2 lemon or lime, juiced
1/3 to 1/2 cup chopped fresh cilantro, or to taste

In a skillet set over moderate heat, warm the oil until it is hot. Add the onion and pepper and cook, stirring, for 5 minutes, or until softened. Add the garlic, gingerroot and curry powder and cook, stirring, for 2 minutes. Add the tuna, chilies and salt and cook, stirring, until heated through. Season with lemon or lime juice and toss with cilantro. Serve with rice or as a filling for flour tortillas.

Tandoori Chicken Salad

For the yogurt marinade:
1 cup plain nonfat yogurt
2 teaspoons Garam Masala powder
1 teaspoon ground ginger
1 teaspoon minced garlic
1 teaspoon ground turmeric
1 teaspoon salt
1 jalapeno chili, stemmed, seeded and finely minced (optional)
4 skinless, boneless chicken breast halves, gently flattened and cut into strips

For the salad:
3 cups shredded iceberg lettuce (1 small head)
3 cups shredded red cabbage (1 small head)
1 cup sliced radishes (1 bunch)
2 cups sliced cucumber (1 large)
1 small bunch scallions, minced
1 cup loosely packed cilantro leaves, finely chopped
1 1/2 cups diced jicama

1 tablespoon vegetable oil
2 to 3 small lemons, juiced, or to taste
Salt and freshly ground black pepper, to taste

Make the marinade: In a bowl combine all ingredients. Arrange chicken in a shallow dish, add the marinade, and stir to coat with the marinade. Cover and chill while preparing the vegetables. Make the salad: In a large salad bowl combine all salad ingredients. In a nonstick skillet set over moderately high heat, warm the oil until it is hot. Add the chicken and marinade and cook, stirring, until the chicken is no longer pink. (Yogurt will separate.) Let simmer just until cooked. Transfer chicken together with pan juices to salad bowl and toss to combine. Add lemon juice and salt and pepper, to taste.

Texas Pork Ribs



INGREDIENTS
6 pounds pork spareribs
1 1/2 cups white sugar
1/4 cup salt
2 1/2 tablespoons ground black pepper
3 tablespoons sweet paprika
1 teaspoon cayenne pepper, or to taste
2 tablespoons garlic powder
5 tablespoons pan drippings
1/2 cup chopped onion
4 cups ketchup
3 cups hot water
4 tablespoons brown sugar
cayenne pepper to taste
salt and pepper to taste
1 cup wood chips, soaked

DIRECTIONS
1. Clean the ribs, and trim away any excess fat. In a medium bowl, stir together the sugar, 1/4     cup salt, ground black pepper, paprika, 1 teaspoon cayenne pepper, and garlic powder. Coat     ribs liberally with spice mix. Place the ribs in two 10x15 inch roasting pans, piling two racks of     ribs per pan. Cover, and refrigerate for at least 8 hours.

2. Preheat oven to 275 degrees F (135 degrees C). Bake uncovered for 3 to 4 hours, or until the     ribs are tender and nearly fall apart.

3. Remove 5 tablespoons of drippings from the bottom of the roasting pans, and place in a skillet     over medium heat. Cook onion in pan drippings until lightly browned and tender. Stir in     ketchup, and heat for 3 to 4 more minutes, stirring constantly. Next, mix in water and brown     sugar, and     season to taste with cayenne pepper, salt, and pepper. Reduce heat to low, cover,     and simmer for     1 hour, adding water as necessary to achieve desired thickness.

4. Preheat grill for medium-low heat.

5. When ready to grill, add soaked wood chips to the coals or to the smoker box of a gas grill.     Lightly oil grill grate. Place ribs on the grill two racks at a time so they are not crowded. Cook     for 20 minutes, turning occasionally. Baste ribs with sauce during the last 10 minutes of     grilling, so the sauce does not burn.

Try to use some smoking chips on the barbecue. The smokier the grill, the better the ribs will taste!"
